Bruschetta is easy and quick to make, plus the prep can be done hours before, making more time for entertaining Ingredients- 4 small slices of sourdough bread
- 2 large tomatoes chopped
- Half small red onion finely chopped
- 1 clove crushed garlic
- Olive oil
- Balsamic vinegar
- Sea salt
Courgette Spaghetti
From a young age, we naturally associate eating spaghetti with romance thanks to the classic Disney film, Lady & The Tramp. However, spaghetti can sometimes feel like quite a heavy dish, so why not try our courgette Milanese recipe for a lighter, reduced carb version! Ingredients- 2 courgettes (Zucchini) spiralised

- 2 chopped cloves garlic
- 1 x 400g tin of tomatoes
- 1 onion finely diced
- 100g plain flower
- 1 egg
- Fresh basil
- Grated parmesan
Frozen Berries with a hot chocolate sauce
This classic yet simple desert is always a hit. The contrast of the frozen fruit with the warmth of the chocolatey creamy sauce makes for a mouth-watering pudding! This may not be as healthy as some deserts but still better than a slice of cake. Ingredients- 250g mixed frozen berries
